We celebrated a little bit of everything today.
100 Days of school and National Pancake Day!
We each counted 100 popcorn kernals
and then we ATE THEM!
We counted to 100, we counted a dollar of pennies...
We read a book called 'PANCAKES! PANCAKES!' That we brought home from the library.
And we made some PANCAKES!...(of coarse)
HEALTHY LIVING-GRAIN PANCAKES
{AKA: Guilt free pancakes to stuff your face with}
1/2 c. Old Fashioned Oats
1/2 c. Red Organic Quinoa
1 1/3 c. Hot Water
1 Egg
1/2 tsp Salt
1 T. Honey
2 T. Melted Butter
1 T. Aluminum Free Baking Powder
Blend or Process the oats, quinoa, water, egg, salt, honey, and melted butter for about 3 minutes or until it has become almost liquified. You'll still see specs of grain. Add the baking powder and blend for 30 more seconds to a minute. Cook em' up as desired! Makes about 15- 4" pancakes.

Those pancakes look amazing! I'm trying to cut out gluten and I'm so happy to see that I can still have my beloved pancakes. :) Thanks for sharing the recipe!
